Job Summary
Breezy Digital Solutions is recruiting an accomplished Pastry Chef for its client. The successful candidate will take ownership of the pastry, dessert, and baking station, ensuring high-quality pastries, desserts, and baked goods that meet luxury restaurant standards.
Job Description
Manage the pastry, dessert, and baking station, ensuring ingredients and equipment are prepared before service.
Prepare and present pastries, desserts, breads, chocolates, cakes, and decorative showpieces to high standards.
Maintain consistency in flavour, texture, temperature, portion control, and presentation.
Manage production schedules to ensure fresh baked goods are available for all services.
Prepare VIP welcome amenities, celebration cakes, and petit fours for special occasions.
Collaborate with the Head Chef and Sous Chef on seasonal dessert menus, tasting menus, and special events.
Supervise, train, and mentor junior pastry staff and apprentices.
Monitor ingredient stock levels and submit timely requisitions.
Inspect incoming ingredients to ensure they meet quality standards.
Control ingredient costs, monitor yields, and minimise wastage.
Ensure proper storage of pastry products and ingredients in line with food safety standards.
Requirements
HND or Bachelor's Degree, preferably in Hospitality, Culinary Arts, Food Science, or a related field.
Proven experience as a Pastry Chef or Senior Pastry Chef in a fine-dining restaurant, hotel, or high-end bakery.
Thorough knowledge of baking and pastry production, including breads, viennoiserie, cakes, desserts, chocolate work, sugar work, and plated desserts.
Strong knowledge of food safety, hygiene, and HACCP standards.
Excellent leadership, team supervision, and training skills.
Good cost control, inventory management, and record-keeping abilities.
Creativity, attention to detail, and high standards of personal hygiene and grooming.
Ability to work effectively in a fast-paced kitchen environment.
